Recipe: Honey Macadamia Brittle

Sweet buttery hard candy with macadamia nuts- a great homemade treat!

Honey Macadamia Brittle Recipe

Ingredients:
½ cup butter or ghee (buy ghee here)
½ cup honey (buy honey here)
1 cup crispy macadamia nuts
Instructions:
Butter or oil a cookie sheet, then cook butter and honey over medium heat to ‘hard crack’ stage on a candy thermometer (300 degrees F).
Add the nuts, stirring over heat for 1 minute.    Pour onto buttered cookie sheet. Refrigerate, to cool.
Flex the cookie sheet to remove the brittle, then break into pieces.  Store in the refrigerator.
Enjoy!

    • Darris, I think you might be able to do it with maple syrup, it should become candy too. And I cannot recommend Earth Balance, but would recommend coconut oil :)

    • You can do it without a thermometer- google or look in Joy of Cooking to see how to test if a candy is at the ‘hard crack’ stage by dropping a bit in ice water :)

  11. What do you mean by “crispy” Macadamia nuts? Are you supposed to bake them in the oven first? Thanks for the help! I’m a newbie!

  12. You soak and dehydrate macademia’s? Soak for how long? What about Brazil nuts? These are two we have been eating raw and not making “crispy”.
