Cranberry Almond Muffins - GAPS and Paleo

These almond flour cranberry muffins are amazing!  They make use of the beautiful tart cranberries that are in the stores now, and lots of yummy nourishing eggs.    The only reason they are yellow is because of the deep yellow yolks of pastured eggs. On the Specific Carbohydrate Diet it is recommended to only consume one  nut flour baked good a day, since nuts are a little bit difficult to digest, but nut flour does create yummy muffins!  These grain free muffins are suitable for people both on SCD and GAPS.

Almond Flour Cranberry Muffins

Makes 12

Ingredients:
almond flour cranberry muffin
1-1/2 cups blanched almond flour (Buy Blanched Almond Flour here)
3 tbsp coconut flour (Buy Coconut Flour here)
¼ tsp celtic sea salt (Buy Sea Salt here)
1/3 cup softened butter (Buy Grassfed Butter here)
¼ cup honey
5 eggs
1 tablespoon cranberries per muffin (spoon onto the top)
Directions:
Combine the muffin ingredients, mixing well.  Place evenly in well-greased muffin pan.
Spoon cranberries  onto muffins.
Bake muffins for 15-20 minutes at 350 degrees, or until set in the center.
Enjoy!
** To use paper muffin liners without using genetically-modified vegetable oil spray on them, just drop a dab of coconut oil into the bottom of each liner, preheat in the oven for a few minutes until the coconut oil melts and wicks up the paper liner.

  1. Are you using cranberries from a bag, like the “name brand” version available in the produce section around the holidays? Do you use them straight out of the bag? I’ve never used cranberries before so I don’t know what to do.

    • Yep, just pour them in. I don’t wash them. I found a great deal at our Costco- like half a gallon for something around $3 :) Keep them in the freezer so they don’t go bad, you can use them frozen

    Just wanted to mention the site Just Almonds. You can buy in bulk at $3.36lb and less. However, there is a FedEx shipping charge on that too. Maybe worth looking into. I just ordered from them 50lbs and it was $168. With the shipping $191. That’s $3.82 per pound.
