Hamburgers on Portobello Mushrooms with Squash Fries


Burgers on portobello mushrooms with homemade ketchup, mayonnaise, sauteed onions, tomato.  Squash fries cooked in coconut oil with mayonnaise and ketchup to dip.

I’ll be honest, nothing really compares with the sweet gooey white bread hamburger bun. But if we’re comparing mushrooms to whole wheat (even soaked wheat) buns I prefer the mushrooms.  These are little ones because they cost half as much per pound as the larger burger-sized mushrooms.  My 3 year old liked them as well, it’s been a while since we have had mushrooms so I wasn’t sure how they’d go over.

  • Those burgers sure look good! I started GAPS a couple of weeks ago and I miss my homemade sourdough bread. I never would have thought to use mushrooms as buns. How creative :-)

    Did you cook the portobellos first?

    I’m also going to try making your Superfood Muffins. Another great idea, cuz I think liver (gak) needs some help too.
