I made mayo the other day with olive oil and coconut oil. I heated the coconut oil to its melting point and that worked well. It’s about 1/4 coconut since that’s all I had, and 3/4 olive. It’s a little more runny than when I made it with canola oil, but I feel much better about it since it’s free of genetically modified foods (canola is genetically modified.
